For Communion, here is a useful ecumenical text that's been set to new music by composer Joel Raney, with an easy "gospel" feel. The verse/refrain format could easily be sung using cantors (soloists) with the entire congregation joining on the refrain. The recording features acoustic guitar and bass playing off the guitar chords included in the octavo.
